Can you see me smiling over here? Oh yes you can b Can you see me smiling over here? Oh yes you can because I just made the most delicious meal: Tofu sisig! Last week @sweetsimplevegan posted the recipe and that’s all I could think about. 

Tofu sisig is crispy tofu with mushrooms, onions, garlic, red bell pepper, Thai chilis, and a yummy sauce with soy, black pepper, calamansi juice, vegan oyster sauce (subbing for patis), vinegar, and the surprise of all surprises, vegan mayonnaise. 

Filipino food is not a cuisine most Americans are familiar with and that makes me sad. Yes there’s a lot of pork in Filipino food, but there’s definitely dishes that I can make vegan, like sisig. What’s so interesting is that it’s all things you probably already have at home that makes Filipino food craveable like vinegar, calamansi (think a cross between lemon, lime, and orange), black pepper, soy sauce, and patis (fish sauce). 

If you love barbecue and street food, the Philippines is for you. If you have a chance to try some Filipino food, give it a try. I promise you won’t be disappointed.

Guess who has not one, but two trips planned? That Guess who has not one, but two trips planned? That’s right - I’m finally getting back to regular travel and I’m so excited. Can’t wait to share what I’m doing and where I’m going soon, but until I do I can say that all destinations are known for warm weather. 

So my passport, luggage locks, and Hello Kitty luggage tag are all ready to go. First trip is in about three weeks so stay tuned! Totally feel like a kid before Christmas and can’t wait to start my travels again.

Another Monday and everyone has resumed a crazy wo Another Monday and everyone has resumed a crazy work week. Head down and plowing through til Friday, right? But some days are just glorious and today is one of those days for me. Everything is just clicking. Nothing magical or extraordinary happened. Just been working hard on me and I can see and feel the changes. 

When you’re ready to drop your baggage, let go of the past, and acknowledge that everything you ever needed was inside you all along, you might find you can breathe and enjoy the peace around you. I highly recommend it.

Decided to try something new today so I made tocin Decided to try something new today so I made tocino tofu. Tocino in Spanish is bacon, but tocino in the Philippines is something completely different, mostly because of its very bright red/pink color, which comes from the curing salt used. So if you see “tosilog” on the menu, you know you’re getting tocino, Sinangag (Filipino garlic fried rice), and a fried egg. The “-silog” part means the rice and egg plus whatever meat of your choice like for example, longsilog (longganisa) or spamsilog (Spam) or porksilog (pork chop). Since I’m a vegan, these were never options for me, but tofu is. 

I just froze my tofu, thawed it out, and pressed it in my tofu press. Then I had a tocino seasoning mix that I mixed with water and let it sit for an hour to marinate the tofu. Then I fried it up in a pan and done! Tofu tocino! Since it’s lunchtime, I’m thinking a tocino sandwich might be best. Plus I’m partial to the color as I love anything pink or red!

I definitely would’ve gotten car sick  if I wasn’t driving. I’m always in awe of all of the mountains here on the west coast. Yes, we have mountains in the Northeast, but these are so different. The landscape is always so striking.

Sunshine belongs to my friends, Makayla and Gavin, and I’m so glad to see them all again. I’ve always had a thing for planes. I’ll stop I’ve always had a thing for planes. I’ll stop and just watch a plane fly overhead even though I’ve seen so many in my lifetime. One of the last places I lived in Boston was directly across from Boston Logan International airport. I used to love watching the line of planes coming in at night. 

In Las Vegas I found the best places to plane watch is of all places, the Whole Foods parking lot at Town Square. Located about ten minutes south of the Strip on S Las Vegas Blvd. it is a shopping area with tons of shops, restaurants, and activities. Every time I go I think about taking pics or video but never do. 

Today was different as it was early (by Vegas standards) and chilly (again by Las Vegas standards) and there was hardly anyone out at about 10:30 am. But there I was watching the planes fly by. They flew out higher than normal, perhaps because of the cloud cover or weather conditions but normally I can see the belly of the plane and they feel so close flying right over the parking lot. Think Maho Beach in St. Maarten, but different. 😊✈️🛫🛩️

I was just talking to a friend about how much I lo I was just talking to a friend about how much I love the windows in Amsterdam. Between the tall, skinny buildings and tall, skinny windows, I love most of the places where I’ve stayed were flooded with light and had great views. 

In case you didn’t know, the reason for the tall, skinny buildings dates back to the 17th century when the city calculated taxes based on the width of a building. So instead of going wide, many decided to go narrow and tall. If you are a keen observer, you’ll probably notice the hooks near the top. They’re there to help those heavy items to the upper floors. You can see the one on this building at the very top center with the hook tucked inside its little wooden case. And those shutters - they’re everything! 

Looking forward to a return trip to Amsterdam hopefully soon although big plans are shaping up for me for 2024. I’m looking at going abroad for a few months and living the digital nomad life. Now if I could just rent out my Vegas place for a few months, it would be perfect. 😊

I just love any kind of street art anywhere. I heard someone say today, “It’s freezing.” After living in Boston and New York, baby this is Spring weather! 😂 I still never wear a coat but I do see people with coats, hats, gloves, etc.
